Anise (Pimpinella anisum) is one of the oldest medicinal plants. It is an annual flowering plant about 12-20 inches in height, in the family Apiaceae native to the eastern Mediterranean region and Southwest Asia. The white flowers mature to small green to yellow seeds, that are harvested in August and September. The flavor and aroma of its seeds have similarities with some other spices, such as star anise, fennel, and licorice root. It is widely cultivated and used to flavor food and alcoholic drinks, especially around the Mediterranean.
